Course structure:

Patisserie de Base:
1. Introduction to French patisserie
2. Basic doughs and fillings
3. mousses, traditional desserts and cakes
4. Classic techniques and basic decoration

Patisserie Intermédiaire
1. Refine artistic and decorative skills
2. Variations on restaurant desserts
3. Introduction to chocolate: tempering and dipping
4. Caramel, nougatine and sugar work

Patisserie Supérieure
1. Dessert menus
2. Decoration and presentation, flavour, aroma and spices
3. Hand-dipped and moulded chocolates
4. Sculpture and display in chocolate and sugar

Requirements:
1. Be 18 years of age or older on or before the start date of the programme.
2. Have a Secondary School Diploma and reach the average score of 65.
3. Provide proof of English Language Proficiency or pass level six of the local English class.
